Why Air Fryer Kale and Potato Hash?

Ingredients
- 2 large potatoes, diced
- 1 bunch of kale, stems removed and leaves chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your air fryer to 380°F (190°C).
- In a large bowl, toss the diced potatoes with olive oil, smoked paprika, salt, and pepper.
- Place the potatoes in the air fryer basket and cook for 10 minutes. Shake the basket and cook for an additional 10 minutes or until crispy and golden.
- While the potatoes are cooking, sauté the onion and garlic in a pan until translucent and fragrant.
- Add the chopped kale to the pan, cooking until it’s wilted and tender.
- Once the potatoes are done, mix them with the sautéed kale, onions, and garlic. Serve warm.
