- Heat a skillet over medium heat and brush lightly with butter or oil.

- Add black beans, corn, red pepper, olives, and green onions evenly over the cheese.
- Cover with the cut-out tortilla and cook until the bottom tortilla is golden brown, then carefully flip to cook the other side.
- Repeat with the remaining ingredients.
- Serve hot with sour cream, salsa, and guacamole.
